Three Generations, One Craftsmanship

„True deliciousness lies not in lavish decor, but in that heartfelt ‚So authentic!‘ the moment the first bite reaches your lips.“

Our Roots — From Hong Kong to Frankfurt

It all began with our father — a legendary chef.

At just 22, he was already a head chef in Hong Kong, specializing in Dim Sum and renowned for his exquisite craftsmanship. In 1984, he brought this dedication to Frankfurt, Germany, founding China Restaurant Yung. In 1999, the restaurant moved to its current location. After decades of cultivation, it is now Frankfurt’s oldest Chinese restaurant.

Wai Wah Yung, Chi Kei Yung, and their siblings grew up in this environment. For us, the kitchen was not a workplace–it was part of home. Peking Duck was not just a menu item–it was our ‚toy.‘ We did not ‚learn‘ to carve duck in culinary schools; we mastered this craft naturally under our father’s guidance, with our hands and our hearts.

Today, this family mission is carried forward by the new generation, partnering with Head Chef Xijie Li, holder of China’s highest culinary qualification, to perfectly blend tradition with innovation and present the most authentic Cantonese flavors to you.

Wai Wah Yung — Dim Sum Master

„Dim Sum must not only taste good–it must ‚touch the heart‘.“

Whenever guests exclaim: ‚This tastes just like authentic Dim Sum in Hong Kong!‘ the credit goes to Master Wai Wah Yung.

As the founder’s daughter, she grew up in the kitchen, her childhood memories filled with the scent of flour and steam. With decades of profound expertise, a refined palate, and endless passion for Dim Sum, she handcrafts every piece daily.

Her recipes are rooted in traditional Cantonese techniques while subtly incorporating modern elements, including carefully developed vegetarian Dim Sum, allowing more people to enjoy this Cantonese delicacy without barriers.

In our popular Dim Sum cooking classes, she personally guides students from around the world: from filling and pleating to steaming timing–every technique is shared generously. What she imparts is not just skill, but the warmth and spirit of Chinese culinary culture.

Chi Kei Yung — World Record Holder x Nutrition Consultant x Digital Strategist

Chi Kei Yung not only welcomes every guest with passion but is also the driving force behind China Restaurant Yung.

As a certified nutrition consultant, he is committed to integrating scientific health concepts into Chinese culinary culture. Whether vegetarian diets, sports nutrition, or children’s meal planning, he hopes every guest can ‚eat happily, and eat with peace of mind.‘

Simultaneously, as a SISTRIX-certified SEO expert, he has successfully brought this family restaurant to the international stage, attracting food enthusiasts from Hong Kong, Singapore, Seoul, and beyond.

Guinness World Records Certification

On July 2, 2024, in Frankfurt, Germany, Chi Kei Yung achieved the astonishing speed of 2 minutes 45.52 seconds to precisely carve a whole Peking Duck into six plates (each 110–130g), officially receiving Guinness World Records certification as the holder of the ‚Fastest Peking Duck Carving Speed‘ record.

Today, his tableside duck carving is no longer just a service step–it is an unforgettable culinary performance blending craftsmanship, rhythm, and aesthetics.

Xijie Li — Head Chef & Master of Southern Chinese Cuisine

„The soul of roast duck lies in compromising on no step.“

Xijie Li is not just a head chef–he is the ‚culinary architect‘ behind China Restaurant Yung’s signature dishes.

He holds China’s highest culinary qualification and is proficient in all major Southern Chinese cuisines, from Cantonese to Sichuan. His meticulous control over aroma layers, texture balance, and heat mastery transforms every dish into a precise and moving culinary interpretation.

His specialties are traditional stir-fries with intense ‚wok hei‘ and charcoal grilling–rich, authentic, and soulful. The reason China Restaurant Yung’s award-winning Peking Duck is so exceptional lies in his persistence and craftsmanship: from marinade formulas and oven temperature control to the crispiness of every duck skin, he refines each detail with near-exacting standards.

No wonder many guests sincerely exclaim after tasting: ‚More authentic than what I had in Beijing.‘

Frequently Asked Questions

What is special about your team’s training approach?
We focus on three core pillars: inheritance of traditional Cantonese techniques, refinement of procedural precision, and intuitive mastery of heat and timing. This is not theoretical instruction but thousands of repetitions before steamers and woks–fingers sensing dough humidity, ears discerning steam rhythm, eyes observing ingredient color–until craftsmanship becomes instinct.
What is China Restaurant Yung’s culinary philosophy?
Rooted in three respects: reverence for ingredient integrity (never masking freshness), respect for traditional techniques (never abandoning method), and commitment to handmade warmth (never taking shortcuts). No additives to conceal, no industrial substitutes–only time and dedication to achieve a „form and spirit united“ culinary experience.
What does the World Record mean to the team?
The World Record is not for showmanship but a mark of craftsmanship purity: precisely carving a duck within 2 minutes 45.52 seconds represents muscle memory accumulated from tens of thousands of knife practices, thorough understanding of duck anatomy, and absolute mental focus in the moment. This is contemporary proof of „practice makes perfect.“
How do you ensure consistent quality?
Three mechanisms safeguard quality: standardized processes (clear parameters for every step), team collaboration rhythm (kitchen operates like a symphony orchestra, each fulfilling their role), and a culture of continuous improvement (daily review, micro-optimization). Quality is not accidental–it is a repeatable, systematic outcome.
Do you nurture young culinary talent?
Yes. China Restaurant Yung views skill inheritance as a core responsibility: young apprentices undergo four stages–„observe, imitate, practice, comprehend“–first quietly observing the master’s techniques, then imitating basic procedures, followed by thousands of repetitive practices, and finally comprehending the philosophy behind the craft.
