Is Peking Duck gluten-free? — What each component contains

The answer depends on which part of the dish you are eating. Peking Duck has three components with different allergen profiles:

  • Duck meat + skin (naturally gluten-free): The roasted duck flesh and crispy skin contain no added gluten. At China Restaurant Yung, the duck is marinated with maltose and salt — no soy sauce in the skin glaze.
  • Pancakes [Allergen A — Gluten]: Traditional Peking Duck pancakes are made with wheat flour. They are not gluten-free.
  • Hoisin-style sauce [Allergen A + F — Gluten + Soy]: Classic hoisin sauce contains both wheat and soy. Our house sauce follows this traditional recipe.

Gluten-free order option: On request, Chef Yung serves the duck without pancakes and without sauce — with rice and steamed vegetables instead. This is the component-separated gluten-free serving. Please note: we are a shared kitchen environment, so we cannot guarantee zero cross-contamination. Guests with coeliac disease should discuss individual risk tolerance with us before booking.

Is Peking Duck gluten-free?

The duck meat itself is naturally gluten-free. However, the traditional pancakes contain wheat flour and Hoisin-style dipping sauces may contain gluten. With advance notice, our kitchen provides gluten-free sauce alternatives and can adjust side dishes accordingly. Please inform us of any gluten intolerance when booking.

Is crispy duck gluten-free?

Crispy duck skin from our wood-fired roasting process contains no added gluten. However, the marinade and dipping sauces may contain soy sauce or Hoisin sauce, which typically contain wheat. Guests with gluten intolerance should request our gluten-free sauce option when booking — we prepare separate allergen-safe condiments with advance notice.

Is duck meat gluten-free?

Yes — duck meat itself is naturally gluten-free. The risk comes from preparation: marinades, sauces, and shared kitchen surfaces. At China Restaurant Yung, we handle gluten-intolerant bookings separately and note allergen requirements in the kitchen. Inform us at least 24 hours before your reservation.

Are the Peking Duck pancakes gluten-free?

Standard Peking Duck pancakes are made with wheat flour and are not gluten-free. Guests with wheat or gluten intolerance should request gluten-free alternatives when booking — we prepare accordingly with advance notice.

Is duck rice (duck with rice) gluten-free?

Plain steamed rice is naturally gluten-free. When served as part of a Peking Duck menu, the duck meat itself is gluten-free, but accompanying sauces and condiments may contain gluten (soy sauce, Hoisin sauce). Always declare gluten intolerance when booking so our kitchen can adjust all components accordingly.

What about gluten cross-contamination at a Chinese restaurant?

Chinese cuisine frequently uses soy sauce and oyster sauce, both of which typically contain wheat. At China Restaurant Yung, we take allergen declarations seriously: when you note gluten intolerance during booking, we use tamari (gluten-free soy sauce) and omit wheat-containing condiments for your course. Cross-contamination risk cannot be fully eliminated in a shared kitchen environment — guests with coeliac disease should discuss individual risk tolerance with us before booking.

For how many people is one Peking Duck enough?

One Peking Duck typically serves 2–3 people as a main dish. Pancakes, scallions, cucumber, sauce and side dishes extend the meal further. For 4 people who want a Peking-Duck-focused dinner, two ducks are recommended.

Peking Duck Pure vs. Peking Duck Menu — what is the difference?

Pure (one course): duck, pancakes, scallions, cucumber and sauce served together in one course. Menu (two courses): skin served first with pancakes for maximum crunch, then the meat returns as a second course with vegetables and rice.

Can I order Peking Duck to go and reheat at home?

Yes. Peking Duck is available for takeaway. To reheat: preheat a convection oven to 220 °C, place the duck in its aluminium dish directly into the oven for about 4 minutes — the skin crisps up again.

How is Peking Duck prepared?

Crisp skin and juicy meat depend on preparation and drying: air separation between skin and meat, blanching, maltose glaze and controlled drying before wood-fired oven roasting for 48 hours.
