Shrimp with Asparagus – 芦笋虾

- Wok
- 180 g shrimp (- Black Tiger shrimp)
- 180 g asparagus (- fresh green asparagus)
- 30 g red pepper
- 1 tsp ginger (- in thin strips)
- 1 tsp garlic (- finely chopped)
- 1 tsp salt
- 2 tsp sugar
- 1 tbsp rice wine (Shaoshin)
- 1 tsp sesame seeds
- 1 tbsp potato starch (to bind)
- 1 tbsp oyster sauce
- 100 ml broth (chicken broth)
- 1 tbsp soy sauce
Prepare shrimp
Wash and pat dry the prawns; add a tablespoon of egg white and 1 tablespoon of potato starch and mix
Prepare vegetables
Peel and blanch asparagus
Pre-fry shrimp and vegetables
Fry shrimp in hot oil
Add vegetables
Stir-fried
Fry ginger and garlic; add shrimp and asparagus; season, add stock and thicken;
Add sesame oil and serve
