Historical Origin
Dongpo Pork is a legendary Jiangnan dish that has been passed down for over a thousand years and is traditionally associated with Su Dongpo, the great literary figure of the Northern Song Dynasty.
According to popular tradition, during his time as prefect of Hangzhou, Su Dongpo organized the dredging of West Lake, bringing great benefit to the local people. In gratitude, residents gifted him pork and Shaoxing wine.
He is said to have instructed that the pork be cut into square pieces and braised slowly using a distinctive method before sharing it with the people. Through gentle, prolonged cooking, the dish developed its iconic character: rich yet not greasy, tender, and melting in the mouth.
To honor this literary gourmet, later generations named the dish “Dongpo Pork,” and it has remained a beloved classic ever since.
