Dim Sum is not a limitless system.
Its quality arises precisely from conscious decisions.
Not everything that is possible is done.
Not everything that is expected is offered.
These limits are not restriction –
they are part of the craft.

6.1 Limits as a Quality Filter
A clear boundary is drawn with heavily processed products:
- flavor enhancers
- artificial coloring
- preservatives
- convenience food
Such shortcuts destroy the internal logic of Dim Sum. They mask texture, level differences and render variety meaningless.
Dim Sum only works as a system when ingredients retain their own structure.

6.2 Conscious Omission: Offal
Offal has a long tradition in Chinese cuisine, yet it places particularly high demands on sourcing and quality.
Without certified organic quality, offal is considered problematic, as it may carry a higher load than other cuts of meat.
For this reason, offal is consciously not offered – even when guests ask for it.
This decision is not based on trend or fear, but on responsibility toward:
- the product
- the guest
- our own standards

6.3 Attitude Instead of Absolutism
Attitude here does not mean rigidity.
Dim Sum cuisine is a dynamic system:
Limits are not drawn to dogmatize, but to preserve clarity.
Not everything must be explained.
But everything must be justifiable.
6.4 Why Attitude Becomes Perceptible
Guests do not perceive attitude through words, but through consistency.
Attitude is not a statement.
It reveals itself in the result.
