ist eine dickflüssige, dunkle Sauce aus der chinesischen und vietnamesischen Küche, die vor allem zu Fleischgerichten gereicht wird. Sie schmeckt süßlich und recht kräftig. Sie besteht vor allem aus fermentierten roten Sojabohnen und Zucker, Weizenmehl, Knoblauch, Essig, Chilis. Dazu kommen Salz und Sesamöl. Traditionell enthält sie Süßkartoffeln.
„Hoisin“ ist eine Transkription der kantonesischen Aussprache des chinesischen Ausdrucks „海鮮“, der wörtlich übersetzt Meeresfrüchte bedeutet. Diese sind jedoch keine Bestandteile der Sauce.
