The name comes from Cantonese: "Char Siu" refers to a particular style of barbecue for pork in which the meat is glazed with a sweet-salty marinade. "Bao", in turn, simply means "bun". So put it all together and we have "grilled pork in a bun" - but believe me, that's not even close to describing this marvel of culinary art.
The Char Siu Baos consist of two main components: the dough and the filling. The dough is a mixture of wheat flour, yeast, sugar and water. Sometimes baking powder is added to promote lightness and fluffiness. The result is a slightly sweet, incredibly soft dough that rises when steamed and encloses the delicious filling.
The filling consists of Char Siu pork, finely diced and then cooked with a mixture of soy sauce, oyster sauce, sesame oil and sugar. The sauce should be thick and sticky so as not to lose the filling when biting into the bao. A little Chinese rice wine is often added for extra complexity.
The answer is: both. Traditionally, they are steamed in bamboo steamers, which gives them their typical white colour and light-as-air texture. But in some regions they are also baked, which gives them a slightly brownish finish and a crispier surface.
